Happy Labor Day, friends! What are you up to today? I spent the morning making these dairy-free gluten-free powerballs so I would have an easy, homemade snack for the week. I love to throw these in a ziploc in my purse for a healthy snack on-the-go that also satisfies my afternoon cravings for something slightly sweet. These powerballs are extremely easy to make as you can see from the steps above and you can add in (or remove) any ingredients you want. The essentials are the oats, nut butter, and honey. Be sure to drizzle the honey over all the ingredients last so that you will get them to stick together! Here are the measurements I use for each, which yields about 24 powerballs:
- 2 cups of oats
- 1 cup of peanut butter
- 1/3 cup of Enjoy Life chocolate chips
- 1 tablespoon of honey
- 2 tablespoons of cinnamon
- 1 tablespoon of chia seeds
- 1 teaspoon of vanilla
